Corned beef and cabbage is a traditional Irish-American dish that is often enjoyed on St. Patrick's Day. Here is a simple recipe to make this delicious meal:

Ingredients:

4-5 lb corned beef brisket

1 large onion, quartered

4-5 garlic cloves, peeled

4-5 sprigs fresh thyme

3 bay leaves

1 tsp black peppercorns

4-5 carrots, peeled and chopped

1 small head of cabbage, chopped

Salt and pepper to taste

Instructions:

Rinse the corned beef brisket under cold water to remove any excess salt.

Place the brisket in a large pot or Dutch oven and add enough water to cover the meat by about an inch.

Add the onion, garlic, thyme, bay leaves, and peppercorns to the pot.

Bring the water to a boil, then reduce the heat to low and let the meat simmer for 2-3 hours, or until it is tender.

About 30 minutes before the meat is done, add the chopped carrots and cabbage to the pot.

Let the vegetables cook until they are tender but still slightly firm.

Remove the brisket from the pot and let it rest for a few minutes before slicing it against the grain.

Serve the sliced meat with the cooked vegetables on the side. Add salt and pepper to taste.
